Perfect for the holidays. And a great way to use up extra stuff in the fridge!

Coconut Pumpkin Smoothie

8 ice cubes
1/2 cup cooked pumpkin
1/2 cup light coconut milk
1 1/2 teaspoons raw agave
1 tablespoon vanilla soy creamer
cinnamon
nutmeg
1 scoop vanilla protein powder (optional)

*Blend. Sprinkle with cinnamon and nutmeg. Super yummy served with soy whip.

    @Stephanie, Rich, and Cristina… we're glad you like the recipe!!!! This smoothie IS a great way to start the day! It's also great after a workout … or if you want a guilt free dessert 🙂

    @Christina… You can get canned pumpkin from the grocery store, or you can cook your own (cut the pumpkin, de-seed, and roast in the over on 400 until soft and mushy!)
