Sweet Potato Pie Smoothie and Ginger Cashew Shake-Punto Final

This is the last recipe in my ode to sweet potatoes–a sweet potato pie smoothie. I’m realizing that you can throw just about anything into a blender with a banana and it tastes good! Also, a few weeks ago, I posted about a ginger-cashew shake that I was trying to ‘perfect.’ I think I got it down…

Sweet Potato Pie Smoothie


six ice cubes
1/2 mashed cooked sweet potato
1/2 banana
3 tablespoons vanilla soy creamer
1-2 tablespoons honey (or 1/2 to 1 tablespoons agave)
1/3 cup vanilla almond milk
cinnamon/nutmeg to taste

* Blend and sprinkle cinnamon/nutmeg on top (it’s nice to inhale the spices as you sip the smoothie).
*I served the smoothie over ice.

Ginger Cashew Shake-Final Take

1/2 cup raw ginger juice (see below)

1/3 cup raw cashews
5 ice cubes
2 tablespoons of honey (or 1 tablespoon of agave)

*Blend

Raw Ginger Juice

3/4 cup peeled, sliced fresh ginger
1 cup water

*Blend, strain

  4. Me either! I thought of my favorite desserts and sweet potato pie came to mind. I figured… turn it into a smoothie! Now, I have to figure out a way to turn fruit tart (my all time favorite dessert) into a smoothie 😉
