Last pops for herbs and spices month (but don’t you worry! They’ll be more pops in August!). I am a sucker for herbs and fruit–basil and pineapple, watermelon and mint, you name it. I added a hint of earthiness to these berry pops by using a bit of thyme simple syrup in the mix. Try this recipe with a syrup made out of your favorite herb or spice! Have a great day … and if you are in DC… stay cool! (It’s 106 with the humidity, ay vey!)
Thyme-Scented Berry Pops
Ingredients:
2 cups blueberries
1 cup strawberries
1/4 cup sugar
1/4 cup water
1/4 cup orange juice
1/2 cup thyme simple syrup (see below for recipe)
Method:
*Puree strawberries and blueberries in a blender until smooth. Add remaining ingredients and mix thoroughly. Pour mixture into a mold and freeze for 45 minutes to 1 hour, or until mixture is slushy. Add popsicle sticks. Freeze until completely frozen. Enjoy!!!
Thyme Simple Syrup
Ingredients:
4 cups water
2 cups sugar
pinch salt
huge bunch thyme (leaves and stems, approx. 1 cup)
Method:
Add all ingredients to large stock pot. Bring to boil, stirring until sugar is completely dissolved. Drop heat to medium low. Let steep/simmer for 1 hour. Turn heat off. Let thyme steep to intensify flavor. Strain and let cool completely before using.

Oh boy! Blueberries and thyme!
Thyme is one of my newest favorite herb as well as a ground cover for beauty. I didn’t know what to do with so much thyme I have. I would sometimes add the sprigs to plain water. Now I know what I can do.
Gosh I want to taste this combination of flavors. I know thyme has lemony notes… so I bet it was good. The pops look fantastic too.
